Description

A cuvee from different white wines, part from wine fermented and aged in amphora and part from wine aged under a veil of yeasts. Joint venture between Dirk van der Niepoort and Raul Perez.

Tasting Notes

The nose is thoroughly complex and beguiling, featuring baked brioche, yeasty-dough, pollen, beeswax, fennel, dried flowers and chamomile. In the mouth, this white is reminiscent of flor, hence its nutty notes, slightly earthy, and leads to a salty, umami finish that is compelling and drool-worthy.
