Description
The distillery located near Lautoka northwest of the main island, was founded in 1980. With its volcanic soil and the lack of erosion, the sugar cane does not need any pesticides. Picked by hand, it is low in tannins and high in sugar. Fermentation uses stream water; the distillation is made in a single pot still.
Tasting Notes
An elegant and resinous nose, the bouquet is reminiscent of juniper and sawdust, enhanced by white chocolate. On the palate, the impressions are distinctly spicy and vegetal: fresh Sichuan pepper, juniper berries, which unmistakably remind the atypical nose. Cinnamon, curry and cumin bring a soft, and yet vegetal, finish in the mouth.
